Best Skillet Eggplant Parmesan

This Skillet Eggplant Parmesan is the ultimate comfort food — tender eggplant, gooey cheese, fresh basil, and crispy breadcrumbs, all made in one skillet! Perfectly satisfying and easy to make, it’s a weeknight meal you’ll crave.

Ingredients:

  • 1 cup extra virgin olive oil
  • 1 bottle LIVWELL Sicilian Eggplant & Basil Sauce
  • 2 medium eggplants
  • ½ cup shredded mozzarella (or fresh mozzarella, if available)
  • 1 cup grated Parmigiano Reggiano
  • 1/3 cup fresh basil leaves, plus extra for garnish
  • ¾ cup panko breadcrumbs
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 4 garlic cloves, minced

Directions:

  1. Preheat Oven: Preheat your oven to 400°F (200°C). Heat 1/3 cup of olive oil in a large, oven-safe skillet over medium heat. Add 2 minced garlic cloves and cook for about 2 minutes until fragrant.

  2. Cook the Eggplant: Add the eggplant slices to the skillet in a single layer. Season with salt and pepper. Cook for about 5 minutes per side, or until golden brown. Flip halfway through to ensure even cooking. Transfer the cooked eggplant to a plate. Repeat with the remaining eggplant, adding more oil as needed.

  3. Layer the Dish: Once the eggplant is cooked, pour 1 cup of LIVWELL Sicilian Eggplant & Basil Sauce into the skillet. Arrange half of the eggplant in a single layer, then top with mozzarella and 2 tablespoons of grated Parmesan. Add the remaining eggplant slices, followed by the remaining sauce and cheese, layering until you reach the top of the skillet. Finish with fresh basil leaves.

  4. Prepare the Topping: In a mixing bowl, combine the panko breadcrumbs, minced garlic, and the remaining ¼ cup of Parmesan. Drizzle with the remaining 2 tablespoons of olive oil, then season with salt and pepper. Sprinkle the breadcrumb mixture evenly over the top of the eggplant.

  5. Bake: Transfer the skillet to the preheated oven and bake for about 15 minutes, or until the sauce is hot and the breadcrumbs are golden brown.

  6. Serve: Remove from the oven and garnish with additional fresh basil leaves. Serve hot and enjoy! Mangia!
