An easy one pot meal - Chicken smothered with creamy cauliflower alfredo sauce, tomatoes, kernels of sweet corn and basil. A perfect week night meal for the whole family.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 bottle LIVWELL Roman Cauliflower Alfredo Sauce
- Salt and pepper
- 1/4 cup olive oil
- 1 sweet onion, sliced
- 2 cups cherry tomatoes, halved
- 6 cloves garlic, minced
- 1/4 tsp crushed red pepper flakes
- 3 cups corn kernels (fresh or frozen)
- Fresh basil, chopped
- 1/2 cup grated Parmesan
Directions:

Cook the Chicken: Season the chicken with salt and pepper. Heat 2 tbsp of oil in a skillet over medium-high heat. Cook chicken for 10-12 minutes, turning halfway, until golden and cooked through. Remove and set aside.

Cook the Veggies: In the same skillet, lower the heat to medium. Add the remaining 1 tbsp oil, then sauté the onion for 3-5 minutes until soft. Add tomatoes, garlic, red pepper flakes, and salt. Cook for 1 minute.

Add Corn and Sauce: Stir in corn and cauliflower Alfredo sauce. Bring to a simmer. Nestle the chicken back into the sauce and cook until chicken reaches 165ºF (about 4-6 minutes).

Serve: Remove from heat and top with fresh basil and Parmesan. Mangia!
