Light, flaky white fish topped with warm LIVWELL Creamy Tuscan Vegetable & Herb Sauce, sweet cherry tomatoes, and fresh basil. An easy, nutrient-packed dinner that feels elegant enough for entertaining.
Ingredients
- 4 white fish fillets, such as cod, halibut or haddock
- 1 jar LIVWELL Creamy Tuscan Vegetable & Herb Pasta Sauce
- 1 tbsp extra-virgin olive oil
- 1 cup cherry tomatoes, halved
- 2 cloves garlic, thinly sliced
- Sea salt and freshly cracked black pepper
- Fresh basil leaves
- Cooked white rice, cauliflower rice, or your favorite grain, for serving
- Fresh lemon, optional
Directions
- Pat the fish dry and season both sides with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the fish and cook for about 3–4 minutes per side, depending on thickness, until golden and just cooked through. Transfer to a plate.
- In the same skillet, add the garlic and cherry tomatoes and sauté for 1–2 minutes, just until fragrant and the tomatoes begin to soften.
- Reduce the heat to medium-low and pour in the LIVWELL Creamy Tuscan Vegetable & Herb Sauce. Warm gently for 2–3 minutes.
- Return the fish to the skillet and spoon the warm Tuscan sauce over each fillet. Cook just until the fish reaches 145°F in the center.
- Serve over rice or cauliflower rice and finish with fresh basil, additional cherry tomatoes, and a squeeze of lemon if desired.
