Crispy Chicken Sandwich with Creamy Ranch Dressing

Ingredients:

For the Crispy Chicken:

  • 4 boneless, skinless chicken breasts (or thighs for more flavor)
  • 1 cup almond milk (or your choice of non-dairy milk)
  • 2 tbsp apple cider vinegar (to create a "buttermilk" effect)
  • 1 cup almond flour (or gluten-free breadcrumbs for a crunchier coating)
  • 1/2 cup gluten-free panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1-2 tbsp avocado oil (for frying)

For the Sandwich:

  • 4 whole grain or gluten-free buns (or lettuce wraps for a lighter option)
  • Fresh lettuce (e.g., Romaine or Butter Lettuce)
  • Tomato slices
  • 1 ripe avocado, slided (optional)
  • Onion slices (optional)
  • Pickles (optional)

Instructions:

  1. Prepare the Chicken:

    • In a medium bowl, mix the almond milk and apple cider vinegar. Let it sit for about 5-10 minutes to create a buttermilk substitute.
    • While it sits, combine the almond flour, panko breadcrumbs, garlic powder, onion powder, smoked paprika, salt, and pepper in a shallow dish. Mix well.
    • Dip each chicken breast into the "buttermilk" mixture, making sure it’s well-coated. Then, dredge the chicken in the breadcrumb mixture, pressing lightly to coat the chicken thoroughly.
  2. Fry the Chicken:

    • Heat 1-2 tablespoons of avocado oil in a large skillet over medium-high heat. Once the oil is hot, add the coated chicken breasts.
    • Fry each chicken breast for about 4-5 minutes per side, or until golden brown and crispy, and the internal temperature reaches 165°F (74°C).
    • Transfer the chicken to a paper towel-lined plate to drain excess oil.
  3. Assemble the Sandwich:

    • Toast the buns lightly in the skillet or oven until golden brown.
    • Spread a generous amount of your creamy ranch dressing on both sides of the buns.
    • On the bottom half of each bun, layer fresh lettuce, a couple of tomato slices, and pickles (if desired).
    • Place the crispy chicken breast on top of the veggies.
    • Top with slices of avocado for extra creaminess and flavor.
    • Place the top bun on and press gently to secure everything.
  4. Serve & Enjoy:

    • Serve your crispy chicken sandwich with a side of baked fries or a fresh salad for a complete meal!
