Shakshuka is a simple dish made of gently poached eggs in a delicious red pepper and calabrian chili sauce. A healthy, delicious lunch or dinner recipe!
Ingredients
2 tbsp olive oil
1 sweet onion, chopped
2 gloves garlic, chopped
2 tsp crushed red pepper

1 15oz can diced tomatoes
1 tbsp fresh basil, chopped
2 tsp fresh oregano, chopped
8oz Calabrian Chili Pepper Romesco Sauce

4 eggs
1/2 cup fresh grated parmesan cheese
1/2 cup fresh grated parmesan cheese
Sliced Italian bread, toasted or grilled
Directions
Heat olive oil in skillet on medium heat. Add onion and cook until soft. Add garlic and crushed red pepper, cook for 2-3 minutes. Add can of diced tomatoes, basil, oregano and cook for 12-15 minutes or until it thickens. Add Romesco sauce and stir. Make small wells into sauce with wooden spoon and crack an egg into each well. Sprinkle the parmesan cheese over eggs and cover skillet until the egg whites are visibly cooked but yoke still runny, approximately 10-15 minutes.
Serve hot with toasted or grilled sliced Italian bread. Enjoy!
