Ingredients:
For the salad:
- 4 medium-sized beets (red or golden)
- 4 cups mixed greens (arugula, spinach, or spring mix)
- 1/2 cup crumbled goat cheese
- 1/4 cup toasted walnuts (or pecans)
- 1/4 cup thinly sliced red onion (optional)
- 1 avocado, sliced
- Fresh herbs for garnish (parsley, thyme, or dill work well)
- Salt and pepper to taste

- 1-2 tbsp olive oil (if needed to adjust consistency)

Roast the Beets:
- Preheat your oven to 400°F (200°C).
- Wash and peel the beets, then wrap them in aluminum foil. Place them on a baking sheet.
- Roast for about 45 minutes to 1 hour, until tender when pierced with a fork.
- Once done, allow them to cool slightly, then slice them into thin rounds or wedges.

- In a large salad bowl, add the mixed greens.
