Vegan Kale Caesar Salad with LIVWELL Miso Caesar Dressing

A hearty, nutrient-packed salad with tender kale, crunchy chickpeas, and your creamy, miso-infused LIVWELL Caesar dressing. Perfect as a light meal or a side dish to complement your dinner.

Ingredients:

  • 6 cups fresh kale, de-stemmed and torn into bite-sized pieces
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup roasted chickpeas (or chickpea croutons for added crunch)
  • 1/4 cup LIVWELL Creamy Miso Caesar Dressing and Dip
  • 1 tablespoon lemon juice
  • 2 tablespoons nutritional yeast (for a cheesy flavor)
  • 1/4 cup sliced almonds (optional for extra crunch)
  • Fresh cracked pepper (for garnish)

Instructions:

  1. Prepare the Kale:

    • In a large bowl, massage the kale with olive oil, a pinch of salt, and a bit of pepper. This helps soften the kale and makes it more tender to eat. Massage for 2-3 minutes until the kale is darker and slightly wilted.
  2. Prepare the Chickpeas:

    • If you’re using roasted chickpeas, simply toss them with a little olive oil, salt, and pepper. Roast them in the oven at 400°F (200°C) for about 20-25 minutes, or until crispy. If you’re using pre-made chickpeas, you can skip this step.
  3. Make the Dressing:

    • In a small bowl, combine LIVWELL Creamy Miso Caesar Dressing and Dip with lemon juice and nutritional yeast. Stir until smooth and creamy. Add more lemon or salt, if desired.
  4. Assemble the Salad:

    • Add the roasted chickpeas and the dressing to the kale. Toss well to ensure everything is evenly coated with the dressing.
  5. Garnish and Serve:

    • Sprinkle with sliced almonds and freshly cracked pepper. Serve immediately, or refrigerate for a few hours for a colder salad.
