Originally from Sicily, “pasta alla norma” is a dish made with tender eggplant, san marzano tomatoes and fresh basil. If you love eggplant parm or Italian caponata, you will love this sauce! Instead of ricotta salata, we added cashews to make this dish luxurious and guilt free! This sauce is excellent over pasta, pizza, crostini, as a base for soup, or as a vegetable side dish.
